How To Prepare Local Coconut Rice

We all know that the major ingredient you would use for your local coconut rice recipe is coconut and it is quite impossible to prepare coconut rice without coconuts. Before we go into today’s recipe, it is important that we note that there basically two types of coconut rice. We have the vegetable coconut rice which we call the paparazzi coconut rice and then we also have the local coconut rice. Vegetable coconut rice is cooked with varieties of vegetables while the local coconut rice is made basically with local ingredients.

Here are the ingredients you would need to prepare this delicious coconut rice recipe:

  1. Coconut milk
  2. Roasted ( You can use any other supplement)
  3. Crayfish
  4. 7 balls of Fresh tomatoes
  5. 10 scotch bonnet peppers
  6. Vegetable oil
  7. One big ball of onions
  8. 2 cups of rice
  9. Garlic (optional)
  10. Ginger (optional)
  11. Curry
  12. Thyme
  13. Seasoning
  14. Salt

How To Prepare Local Coconut Rice

Here are the steps you should follow if you want to achieve the best result of local coconut rice:

Step 1: The first thing that you have to do is to get the coconut milk. I am going to teach you how to extract the coconut milk from the coconut. However, if you feel this might be too stressful for you, you can just go for the canned already extracted coconut milk which you should be able to pick up at any grocery store. Well, its local coconut rice so i prefer my milk extracted fresh from the coconut itself.

Step 2: rinse the coconut before you break it as it might be covered in a lot of unwanted dust. After you have  done that, you can go ahead to break the coconut.  Well, you do not need the water from the coconut but some people prefer adding it to their coconut rice. Well, i feel it doesn’t do anything special and it is usually not so clean so i just discard it.

The next thing you would need to do is to remove or separate the fleshy part of the coconut from the back and then discard the back. You can do this with the use of a knife. Go ahead now to chop the coconut into smaller pieces with a knife and then put them in a blender and just blend it but if you do not have a blender, after you have chopped it, use a hand grater to grate it and then separate the coconut milk from the shaft using a sieve and water. Pour your coconut milk in a clean bowl and then set aside.

Step 3: The next step you need to take is to parboil your rice. I like to parboil my own rice because i do not like my rice scratchy and i do not like it sticking together. Parboil your rice for about 7 minutes but if you do not like parboiling your rice, you can just make sure you wash it properly. After you have parboiled your rice, sieve it and then set it aside in another clean bowl.

Step 4: The  next step you are going to take is to wash you tomatoes and your peppers and then grind them using a blender either manual or electric.  You can choose to add a little bit of garlic and ginger just to add flavour to our food. It is not compulsory anyway. Set this aside in a clean bowl also as soon as you’re done.

Step 5: the next thing you need to do is to hand pick your crayfish if you want or grind it if you choose. I like mine hand picked because i just like to see it in my food. Now let’s get right into coming our local coconut rice properly.

Step 6: the next thing you need to do is to set a clean pot on the fire. Once it is all dried, add a little bit of vegetable oil.  I do not use palm oil because it doesn’t come out as well as vegetable oil does. As soon as the vegetable oil heats up, you can proceed to add your blended tomaro and pepper mix. Fry this for some time, fry for about 5 minutes

Step 7: the next thing you need to do is to add your already prepare coconut milk to your pot. As soon as the aroma in the kitchen rises and it has boiled for quite some minutes, you can then proceed to add your already parboiled or washed rice. The next thing you need to do is to add a little bit of curry and thyme.

Step 8: We have not forgotten our roasted fish. It is at this point you wash your roasted fish with salt because of salt. I like to use roasted fish when preparing local coconut rice because it definitely tastes better and more local. Once you have washed it, throw it into your steaming pot of rice and then add your crayfish next. You can choose to add locust beans (Iru) but i do not like using it. Add your seasoning and salt to taste. Check for water from time to time so that this delicious recipe does not get burnt. Once the rice is soft enough and all the water dried up, you can then turn it off because it is ready!!!!
