There are various ways by which bitter leaf soup (ofe onugbu) can be prepared. I am going to teach you two methods of preparing bitter leaf (ofe onugbu). The first method i am going to teach you is bitter leaf soup with cocoyam while the second method i am going to teach you is bitter leaf soup with egusi. Please note that preparing bitter leaf soup with either of these methods is very delicious and it depends on which one you prefer. Lets get right into it!

Bitter Leaf Soup With Cocoyam

Just as the name goes, the most important ingredient for making this type of bitter leaf soup is simply cocoyam. Here are the ingredients you would need for preparing this type of bitter leaf soup:

  1. Cocoyam
  2. Bitter leaf
  3. Stock fish
  4. Dried fish (any type of dried fish)
  5. Cray fish
  6. Yellow pepper
  7. Red oil
  8. Salt
  9. Seasoning
  10. Uziza (optional)

Here are the steps you need to follow if you want to prepare this type of bitter leaf soup:

Step 1: The first thing you would need to do is to wash the bitter leaf till there is no longer bitter taste in it. You can choose to buy the already washed bitter leaf at the market to save you the stress.

Step 2: after you have washed your bitter leaf, you should then proceed to boiled your cocoyam till it is soft enough to pound. Although they sell dried cocoyam in the markets, i do not like to use it because it doesn’t taste very fresh but if you feel you do not have the time to pound your cocoyam, you can use it. Put the already pounded coco yam in a plate and if you want to use dried cocoyam powder, you do not need to do this.

Step 3: The next step you need to take is to wash your fish. I like to use stock fish and dried cat fish. With the aid of a little salt and hot water, wash your fish to remove all the bones as well as dirts. Place a clean pot on the fire, put water. The water you put should be the quantity of soup that you wish to cook.  Pour your fish into the already boiling pot of water.

Step 4: add a little bit of red oil and leave to boil before you add the pounded cocoyam or the coco yam powder. Once it boils, add it. The next thing you would need to do is to add some grinded uziza seed. Although this is not complusory. The purpose of adding cocoyam is just to give it flavour and thicken the soup. Add your cray fish and your pepper.

Step 5: you should leave the soup to thicken properly before you add your salt and seasoning to taste. Once you have done this, it is then time to  add your wash bitterleaf. Leave to steam for about 5 minutes and then turn it off. Your cocoyam bitter leaf soup is ready to be eaten with any swallow of your choice!

Bitter Leaf Soup With Egusi

Just as the name goes, the most important ingredient for making this type of bitter leaf soup is simply egusi. Here are the ingredients you would need for preparing this type of bitter leaf soup:

  1. Egusi
  2. Bitter leaf
  3. Stock fish
  4. Dried fish (any type of dried fish)
  5. Cray fish
  6. Yellow pepper
  7. Red oil
  8. Salt
  9. Seasoning

Here are the steps you need to follow if you want to prepare this type of bitter leaf soup:

Step 1: The first thing you would need to do is to wash the bitter leaf till there is no longer bitter taste in it. You can choose to buy the already washed bitter leaf at the market to save you the stress.

Step 2: the next step you need to take is to wash your fishes. I like to wash my fish with a little bit of hot water and salt just to soften it and take out all the bones. Put the alredy wahed fish inside a small plate.

Step 3: The next step you need to take is to fry your egusi. To do this, you would put a small amout of red oil in a pot and leave to heat. Once it has heated up, put your egusi into it and then stir. Add water. Be careful not to add so much water as we do not want the soup to become watery.

Step 4: proceed to add your fishes, add your crayfish as well as your yellow pepper. Leave to simmer for about 5 minutes. You can then proceed to add your salt and seasoning to taste.

Step 5: the next step you should take is to add your already washed bitter leaf. Leave for about 3 minutes before you turn off. Your egusi bitter leaf soup is ready to eaten with any swallow of your choice!
